But it’s a great item to have in your repertoire. For those times when you want something sweet but don’t want to make a whole pan. Or when you want something sweet but don’t want to eat a whole pan!
It’s easy, quick, chocolatey and delicious. And did I say easy?
It comes together in one cup or small bowl, and cooks in less than 2 minutes.
Here’s all you need to make a chocolate covered banana brownie in a cup:
- 3 tablespoons spelt flour
- 1/2 tablespoon cocoa powder
- 1/2 teaspoon baking powder
- dash salt
- 1/2 tablespoon sugar
- 1 teaspoon oil
- 3 tablespoons water
- 1/2 banana
In your cup or small bowl, mix together the dry ingredients. Add the wet and stir together. Slice the banana and stir in (or if you want to get more elaborate, use a different bowl or cup and layer the banana and chocolate mixture).
Pop it into the microwave for 1 1/2 minutes and it’s ready! Or you can bake it in the oven for about 10 minutes…
Top with a spoonful of cashew cream or a scoop of coconut ice-cream and it’s a great quick dessert! A chocolatey-dense brownie with warm, soft bananas and your favorite creamy topping.
