I’ve never done a WIAW post before, so it seemed like a good time to start 🙂 . I love reading them on other blogs, as they always give me so many good ideas when I think about what I’m going to eat during the day.
This is what I ate yesterday ~ Tuesday ~
It started out great, as I’d actually planned out what I’d have for breakfast the night before. As some of you know, I’m not always a great breakfast eater. I always start with coffee, and then if I get caught up in my work, it’s suddenly noon before I realize it and too late to have breakfast before I have to start thinking about lunch.
So this was perfect – a breakfast burrito with scrambled tofu (including red onion and orange bell pepper) and sauteed kale, topped with salsa, on a sprouted tortilla. Yum!
Mid-morning, I had Earl Grey tea with lemon and a tiny bit of sweetener,
followed by a snack of green juice. This was a clean-out-the-fridge green juice, and had romaine, kale, dandelion greens, cucumber, celery, ginger, lemon, and red & green apple.
Lunch was a salad and soup that had chickpeas, greens, and sweet potato, and oolong tea.
I was still a little hungry after that and had a couple spoonfuls of this delicious-tasting goop. It was supposed to be protein balls, but it was too sticky to make balls, so I left it like this and ate it with a spoon. It was chocolate peanut butter flavored, and quite delicious.
And then dinner/evening snack was a bit random, consisting of a small green smoothie (kale/pineapple/banana), a piece of whole wheat bread with some of this tahini sauce, and herbal pumpkin spice tea.
All in all, a fairly well-rounded day… lots of greens, a good amount of raw, and some bread to pull it all together 🙂 .
This was so much fun! I’ve never done a WIAW either, but maybe I will soon!
