I love bowls ~ isn’t this one beautiful? l would love to have one, and not just for its inherent beauty, but for all of the delicious things I could put in it that would look even more spectacular. Mashed potatoes, soup, noodles, hummus, popcorn…. And there’s even a new cookbook out that gives recipes for all of these things that go in a bowl. Ok, maybe not the popcorn, but oh yeah, that one’s on her blog.
Becky is the amazing force of energy behind the Glue and Glitter blog, and vegan mom to 1 1/2 year old Darrol Henry. She writes about amazing DIY crafts, like these fun curly toothpicks made from junk mail; yummy vegan recipes; and her adventures in parenting a toddler. How she has time to write books I don’t know, but she does and here it is!
I was fortunate to get a copy of Bowls! to check out and share a recipe with you. Seriously, there is so much great stuff in it, from tofu rancheros bowls to noodle bowls to burrito bowls, to all the sauces and layers that you’d want to put in there. It has so much good stuff, like this ~
Pumpkin Spice Oatmeal
Tropical Oats Bowl
Cheesy Grits with Vegan Bacon
and this amazing looking Peach Hot Sauce.
And lucky you guys, here is the recipe for this yummy Creamy Curried Tomato Soup. (Yes, I did put it into a cup, but it still counts!)
Ingredients for 2 servings
1 pint cherry tomatoes
2 cups veggie broth
1 cup raw cashews, soaked overnight and drained
about a tablespoon of massaman curry paste
1 teaspoon soy sauce
1/2 of a Haas avocado, chopped
handful of roasted cashews
Sriracha sauce, to taste (optional)
1. Put all of the ingredients into the blender except for the avocado, roasted cashews, and Sriracha. Blend until completely smooth.
2. Transfer the soup to a small saucepan, and cook over medium heat, stirring constantly, just until the soup is heated through.
3. Top with the avocado and roasted cashews, and drizzle the bowl with Sriracha, if you want some extra spice.
How easy is that? And it tasted great!
If you like what you see here and want your own copy of Bowls!, you can get it from Becky’s website.
