Change up your daily bowl of oatmeal with these delicious Carrot Oatmeal Breakfast Cookies. Full of fiber, protein, good fats and minerals, they will keep you going for hours!
- 1 mashed banana
- 2 tablespoons tahini
- 1/2 cup shredded carrots
- 1/2 teaspoon vanilla
- 1/2 teaspoon cinnamon
- Dash of salt
- 1/2 cup rolled oats
Stir together the banana, tahini, carrots, vanilla, cinnamon and salt. Mix in the oats. Form into 4 or 6 cookies on a baking sheet. Bake at 350 degrees for about 12 minutes, or until set. Let cool for a couple of minutes and then enjoy! Makes 2 servings.
You can optionally add a drizzle of nut butter or softened coconut butter as icing.
