Banana Romaine Salad

Need a little something to shake up your summer salad routine? Add a banana to your salad! I particularly like it in romaine salads, as the crunchy, fresh romaine pairs really well with the sweet, dense banana. It’s also a nice combination with arugula or other bitter greens. The salad shown is a simple one: fresh romaine and grated jicama, cucumbers, earthy goji berries, and crunchy toasted walnuts.

My favorite dressings to use with a banana salad are tahini or balsamic vinaigrette. They give a little savory flavor, and pair nicely with the salad ingredients.
