Today I made one of the easiest & yummiest things ~ a hot & sweet potato.
Sweet potatoes are incredibly nutritious, especially the ones that are darker orange. Yams are also darker orange, and share many of the same nutrients, even though yams and sweet potatoes are only distantly related.
They have a good amount of fiber, protein, and the dark orange ones are high in beta-carotene, which is a nutrient equivalent to vitamin A.
This little sweet potato was the perfect size….
Ready to go in the oven, poked so as not to explode and dressed in parchment paper.
Baked at 385 for about 30 minutes, and was perfectly soft inside. Once it came out, I split it and added a sprinkle of Daiya vegan cheese, and broiled on high for about 5 minutes. (sorry for the blurry photo!)
The final addition ~ HOT fresh salsa! It was a perfect complement to the sweet potato and melty vegan cheese…. and perfect with a salad.
Wow this looks great! and what’s in the salad? it looks pretty exciting too…. I bet that spicy salsa tastes so good with the smooth sweet potato (and Daiya cheese makes almost everything more delicious)
Yup, the salad was pretty good too! I was out and suddenly wanted an amazing salad without having to make it 🙂 so I went to the Whole Foods salad bar. This one was romaine, arugula and other raw salad veggies, a few grilled veggies, and a little pasta salad… the best combination ever!
