Recently, in another post that I wrote, I was talking about where the inspiration for my recipes comes from ~ basically all over the place 🙂 . This one today actually came in a vision. I was looking at the blood oranges on the counter, thinking about how much I love them and their beautiful colors, and all of a sudden I had a vision of a glass filled with ruby juice, topped with fluffy white clouds…. and so the Zesty Blood Orange Cocktail was born. Now the vision in my mind was a little different from the reality of what came out, but it’s still great.
Zesty Blood Orange Cocktail
- juice of 2 blood oranges
- 1/4″ fresh ginger
- 1/4 teaspoon lemon zest
- splash of seltzer
- few tablespoons of coconut cream (the thick part at the top of the can)
Blend together the orange juice, ginger and lemon zest. Pour into a glass and add the seltzer, then a few spoonfuls of coconut cream. To get the cream, put a can of full-fat coconut milk into the refrigerator to chill. Take it out but don’t shake it – carefully open it and spoon off the cream from the top.
Top with a lemon twist and/or lemon zest.
