Happy New Year! How are all of your resolutions going? 🙂 While I prefer to think of them as “goals” rather than “resolutions”, at various annual turning points, many of us tend to reevaluate where we are and decide on some changes that we want to make for the upcoming months. And those changes often include eating better and/or going to the gym.
I waited a few days to talk about this, because while we want to begin immediately on January 1, there are usually some leftovers from holiday parties and gatherings to be eaten. So now that we are past that point, we can look at easy ways to make some healthy changes.
When we think about fast and easy, smoothies usually come up quickly. There are lots of people who don’t drink smoothies and are perfectly happy and healthy, but they really are one of the easiest ways to bump up your daily fruit & veggie count. Just blend a few handfuls of fruits & veggies with some liquid, add some spices or other flavorings if you want, and you’re set.
For one great resource for recipes and motivation to keep up your new habit, my friend Becky from Glue and Glitter has written 40 Days of Green Smoothies. It’s been out for while as an e-book, and now is available in print! I’m giving away a copy of the e-book, which is packed with great recipes that will keep you going for weeks. And to get us all started, here is Becky’s delicious Cherry Tangerine Smoothie ~
Cherry Tangerine Smoothie
This smoothie is not the prettiest, as you can see in the photo, but it’s a great example of how even an ugly smoothie can be delicious.
Ingredients
- 1 cup frozen cherries
- 1/4 Haas avocado
- 1 small or 2 large tangerines, peeled and sectioned
- 1/2-1 cup water (add as needed, to get things moving)
- 1/2 cup spinach
- 1 tablespoon chia seeds
- 4 ice cubes
Method
Puree until smooth.
Yield: 1 serving
