My New Favorite Breakfast

I have a new favorite breakfast, and that’s really saying something since I’ve never been much of a breakfast eater.

For the past couple of years, there have been many recipes for Overnight Oats around the blogs – Angela has lots of variations on Oh She Glows. Ever since I saw the recipe, I’ve loved the idea of overnight oats. What could be better than a delicious breakfast already made in the morning? Especially after seeing the amazing overnight oat parfaits that Angela has come up with – she has a gift for these!

Sadly, when I actually tried them myself, I discovered that the taste of raw oats doesn’t do a whole lot for me. I’ve never been a fan of muesli either :-).

What I’ve now found is a combination of the freshness of soy (or coconut or almond) yogurt, fresh fruit, the crunch of nuts and other mix-ins, and the creaminess of cooked oatmeal.

This variation was extremely simple – just 4 main ingredients and 5 minutes prep time. I used 1/4 rolled oats, 1 cup of plain unsweetened soy yogurt, about 2 Tablespoons chopped brazil nuts, and about 1 1/2 cups of sliced strawberries and blueberries.

I mixed the oats with 1/2 cup water and a sprinkle of cinnamon, the put it into the microwave for a minute and a half. I don’t usually use the microwave for actual cooking (only reheating), but I’ve found that when I try to cook small amounts of oatmeal on the stove, it doesn’t cook well, so this is my one concession to microwave cooking.

Then, once that is cooked, just mix in your toppings and it’s ready to eat!

Ok, so it definitely doesn’t have great eye appeal, especially after looking at those amazing overnight oat parfaits…. but it tastes great. And the toppings can be as varied as your imagination – nut butters, any kind of fresh or dried fruit, flavored yogurt, nuts and seeds, herbs and spices ~ the combinations are endless.
