I’ve had a little experience with matcha in the past, primarily in matcha tea lattes. They were ok, but I really didn’t like the aftertaste that came along with it. I tried a few times, but it was kind of always the same.
But lately, I’ve seen some different types of recipes using matcha – Kathy at Happy Healthy Life has posted about her love for matcha here… and that piqued my interest.
I decided to try some today, and make a matcha smoothie as an afternoon snack on this hot hot day.
Coconut Matcha Smoothie
1 young coconut, water and pulp
1/2 cup almond milk (I used plain, although I’m sure that vanilla would be great)
1 teaspoon matcha powder
1/2 inch nub of fresh ginger (one of those little nubs that sticks off of the main root)
2 fresh mint leaves
4 ice cubes
Blend everything together and enjoy.
This came out great – nicely refreshing, without any one taste overwhelming the whole thing. I couldn’t even taste the matcha separately as I have in the past, but it added a wonderful flavor. Combined with the richness of the coconut, the spicyness of the ginger, and the fresh mint, it was a wonderful combination.
And the surprising result was that it gave me a huge burst of energy! I don’t know if it was the matcha, or any particular ingredient, or the synergy of them all… but it was great!
Mmmmmmm,….a lovely energizing smoothy! I want one: yes, please!
