This was originally my idea for a nice raw green goddess soup ~ lots of herbs, some greens, a little creaminess, all combined to make a great live soup. The result, however, was more than I’d bargained for.
You know how some green juice recipes, and some raw soup recipes, say “This is great for someone who is new to green juices/raw soups…”? Well, this is NOT one of those recipes. 🙂
This is not for someone looking for a nice, mild soup…. or for someone who likes strong flavors disguised as something else. This is a GREEN soup ~ hence its new name of “Warrior-Goddess”.
When I made it and immediately tasted it, it was more mild and I thought it would stay that way ~ but after it sat for a bit, the flavors started to deepen, so the longer you wait to eat it, the stronger it will taste.
Green Warrior-Goddess Soup
- 1/2 cup cashews, soaked for 15 minutes
- 1 cup water
- 1 avocado
- a handful each of: parsley, cilantro, arugula, kale (or substitute your choices for herbs & greens)
- 1 tablespoon tahini
- juice of 2 limes
- 2 dashes cayenne pepper
- 2 dashes smoked paprika
- salt & pepper to taste
- more water, if needed to reach the right consistency
- raw pumpkin seeds & chopped tomato for garnish
Blend together the cashews and water. When smooth, add the avocado. Add the remaining ingredients (except garnish) and blend well. Add more water and/or spices if needed. Garnish and enjoy!
