What’s your favorite dish to share with vegan newbies? ~ Vegan MOFO 2013

Last night I had an opportunity to spend the evening at one of my vegan cooking classes, sharing information and delicious food with everyone.

I’ve taught lots of vegan cooking classes over the past few years, both in person and online, and it’s always so fun to decide what to make with everyone. There is so much amazing vegan food to choose from!

Meals have run the gamut from easy and quick, to more elaborate and fancy. Always seasonal, and always including something a little unusual. Last night’s meal included greens (always), spicy butternut squash soup, and this cake for dessert:

What’s your favorite dish to share with newbies to the vegan diet?

  1. In a basic vegan cooking class I like to prepare fresh juices, like carrot-apple or cucumber-celery-apple as daily health drinks, my live 5 minutes pea soup, a green salad with a light tahini dtessing and an easy dessert, such as fruit salad.

  2. I like to make comfort food or decadent desserts for folks, because I think there’s a misconception that vegans live on salad. Tell me that after you eat a shepherd’s pie loaded with mashed potatoes!

  3. That cake looks insanely delicious! I love sharing “creamy/cheezy” dishes with new vegans. It’s even better when I don’t use the store stuff like Daiya, so I can be all –oh, this? It’s just cashews and almond milk. 🙂 Cake is also a good one to wow people with because most people thing eggs are essential for baking.
