We’re now in the midst of that time of year when we are surrounded by the most food ~ Halloween through New Year’s, with its abundance of parties and social gatherings. Really, I think we should be surrounded by food all year long, but that’s just me π
But being vegan or trying to eat somewhat healthy doesn’t mean you have to give up amazing food, great flavors or your Uncle Steve’s pie-eating challenge. Whether you’re creating a fully vegan Thanksgiving meal, or bringing a dish to your traditional family dinner, there are so many options that will wow anyone who tries them. Here are a few to get you going ~
Breakfast/Brunch:
- Coconut Spice French Toast
- Cranberry Orange Oatmeal
- Spiced Poached Pears with Sweet Cashew Cream
- Mocha Mint Protein Smoothie
Beverages:
- Spicy Cranberry Orange Cocktail
- Great Green Juice (tell everyone it’s a new cocktail trend π )
- Green Tea with Lime
Soups and Starters:
- Velvety Cauliflower Soup with Vegan Smoked Gouda
- Vegan Bacon Cheese Soup
- Vegan Bacon Cheddar Mini-Quiches
- Garlic Red Pepper Chia Crackers with fresh guacamole
- Quinoa Stuffed Zucchini (or cucumber) cups
Main Dishes & their accompaniments:
- Tempeh Stuffed Squash
- Pumpkin Rice Rounds
- Cranberry Pomegranate Relish
- Cheesy Sriracha Brussels Sprouts
- Rosemary Olive Potpie Turnovers (for that “sandwich with the leftovers” craving”
- Gluten-Free Spice Cookies
- German Chocolate Chia Pudding
- Double Chocolate Caramel Marshmallow Brownies
- Double Chocolate Peanut Butter Cupcakes
Hmmm… I seem to have a thing for double chocolate, but no pie recipes. I’ll have to remedy that… Β Stay tuned for a pie recipe, more brussels sprouts (I love them!) and another pumpkin-y main dish coming up in the next few days!
What a delicious menu! These recipes make me wish that I got to do a home-cooked Thanksgiving.
Thanks, Becky! I know, I want to make them all now after looking at the recipes π
JGD!
Thanks for the collection of recipes. I may be making the double chocolate cupcakes for a family gathering this weekend. And, I love seeing my rendition of your tempeh stuffed delicata squash.
