I’ve been hearing that some of you are experiencing fall weather. Not so in Southern CA ~ it’s going to be 100 again tomorrow 🙂 But for those who are ready for some creamy, warm soup to snuggle up with in the evenings (ideally in front of a crackling fire!), this is a great one to enjoy. Filled with delicious flavor, this easy cauliflower soup is perfect for this time of year.
Creamy Cauliflower Soup
- 1 medium cauliflower, steamed
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons nutritional yeast (optional)
- 1/4 teaspoon turmeric
- 1/2 cup raw cashews
- 2 1/2 cups hot water
Blend all ingredients together. If you’re not using a high-speed blender, you may want to soak the cashews for 30 minutes and blend them with the water first, then add the remaining ingredients. Warm on the stove if needed.
Makes 4 servings.
