Fig & Arugula Salad with Ginger Balsamic Dressing

This is a simple yet elegant salad that I created for an online cooking class that I taught last weekend. It is easy to make and got rave reviews.

Salad:

  • Baby Arugula
  • Baby Spinach
  • Fresh figs, quartered (or dried figs, soaked)
  • chopped almonds

Dressing:

  • a mixture of olive oil & water to make 3/4 cup
  • 2 Tablespoons balsamic vinegar
  • 1″ x 1/2″ piece fresh ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Blend the dressing ingredients. This is great in that the amounts of olive oil and water can be customized each time you make the dressing.

Mix  the spinach and arugula, and top with the figs and almonds. The dressing can be poured over the top, or the greens can be tossed in the dressing first.
