Today’s theme for Vegan MOFO is to tell about a weird food combination that you love. That took me a little while to come up with, as I don’t really crave anything really strange, so I decided that this will fit for today ~ green chili fruit salad.
Deconstructing the dish, it’s actually not all that strange, as it’s a variation of Waldorf Salad, but some people might consider chilis and fruit to be a unique combination.
It’s a fairly simple one to put together, and you can use any of your favorite fruits or whatever you have on hand.
Mix together:
- 1-2 stalks of celery, chopped
- 1 apple, chopped (I used a green apple today)
- 1 pear, chopped
- 1 kiwi, chopped
- 1/2 cup grapes, halved (I used red grapes for added sweetness & color)
- 1/4 cup walnuts, chopped
- 1 tablespoon diced green chilis
- 2 or more tablespoons vegan mayonnaise
- juice of 1 lemon
- salt & pepper to taste
Toss together and serve.
I have made this with dried cranberries or cherries as well, and it might also be interesting with some orange added. And definitely some avocado! (I didn’t have any today).
