A calorie is a calorie is a calorie?

I just came across this very interesting article in Scientific American.  It is a bit longer than your usual blog post, but well worth the read.

I’ve seen lots of discussion lately about the value of calories… some people still say that a calorie is just a calorie, and calories in-calories out=our weight… and others are saying that a calorie isn’t just a calorie, and that many variables such as how quickly foods turn to sugar in the bloodstream and how they affect our hormones all change how those given calories will act on the body.

This particular article I found to be really interesting because it discusses things such as how our calorie consumption can be affected by the microbes we do or don’t have, and how uncooked foods can vary significantly from the number of calories we think they have due to how they are processed in the body.
