This is a wonderfully refreshing drink. It has a strong lime flavor and is not very sweet, so it tastes incredibly healthy.
You can adjust the amount of water – using the amounts as listed, it is a delicious cooler, and if you reduce the amount of water, it is a thicker smoothie.
- 2 large handfuls kale
- 1 banana
- 1 whole lime (peel and all if you have a vitamix)
- 1 cup unsweetened coconut milk (the refrigerated or packaged kind, not the canned kind) You can also blend up a fresh young coconut and use that.
- 1 cup water
- 1 heaping teaspoon thai coconut sugar
- ice, if desired
Blend up and enjoy!
If you’ve never tried thai coconut sugar, it is great to add to your collection of sweeteners. It is derived from the fresh sweet nutritious sap of the coconut blossoms, then thickened under controlled heat to avoid overcooking which would affect the nutrients and acidity. It r contains only 12% sugar, and has a higher nutritional content than other sweeteners – it is high in Magnesium, Zinc, Iron, and Potassium; it is a natural source of vitamins B1, B2, B3, B6 and amino acids (especially glutamic acid), and it has a low glycemic index of 35.
It tastes like a less-sweet version of maple sugar!
Nice, these strong and fresh green drinks. The whole lime really surprises me. Once Kale will be back, I will definitely have to try….um…might be convertable with spinach or other greens…
That looks amazing! I don’t have a high speed blender, but I like the idea of using the lime peel, too. Do you think it might still work if I chopped it up?
Yes, I think that would be great… and even if if doesn’t blend totally, you’ll have little extra bursts of lime every so often 🙂
