Today marks the beginning of the Vegan Month of Food ~ 30 days filled with delectable food, recipes and videos from amazing food bloggers around the world. As you go through everyone’s posts, you may see some similarities in daily themes, yet everyone will be putting their own spin on them.
And today… it’s breakfast time!
I have a love-hate relationship with breakfast. Well, maybe “hate” is too strong of a word…. I just don’t always make it one of my priorities. I know, I know, breakfast is the most important meal of the day. But so many other things are important in the morning ~ coffee, starting work, and extra sleep 🙂
But then, when someone else makes me breakfast, it can be a really good thing. Especially in Europe. Things I wouldn’t ordinarily find exciting at home suddenly become the best thing ever when I’m eating it in a hotel or B&B in Europe… and so I wanted to share a few of my favorite European breakfasts today.
From a pension in Germany ~
Muesli with pear and rice milk, kiwi, bread, jam, coffee, and juice.
From a restaurant in Vienna ~
Pumpkin puree topped with smoked tofu, fresh greens and steamed veggies, grilled multigrain bread, fresh soy yogurt with pear, roasted grains and chia seeds, and a soy latte. This was one of my favorite breakfasts ever.
From a fancy hotel in Karlovy Vary (Carlsbad), Czech Republic ~
The best bread ever with jam, muesli with added raisins, pumpkin seeds and sunflower seeds, and fresh fruit. And coffee! I often travel with small containers of vanilla soy milk (even though it’s heavy in the suitcase) for coffee, but I’ve also learned to drink it black when necessary.
And when I’m home, breakfast is usually something fast and easy to eat such as ~
Avocado toast with hemp seeds, lemon juice, salt and cayenne
or
a pineapple-ginger smoothie.
