Often the conversation running through my mind as I plan or create new recipes is rather random. The one I had today went like this:
“I should do a dressing recipe today, I haven’t done one of those for a while.”
“What kind…. how about that orange maple viniagrette. No, there’s no maple syrup.”
(glance at the counter, see the basket of apples, see the fresh thyme in the fridge) “Apple Thyme viniagrette, that will be a great combination.”
And then I spent 10 minutes putting this dressing together for the salad I’d just made. It just fell into place :). They aren’t always that easy, but this particular incredibly flavorful dressing definitely worked out well.
Apple Thyme Vinaigrette
- 1 small apple, cored and chopped
- 2 tablespoons fresh thyme (or try 1 teaspoon dried)
- 2 tablespoons olive oil
- 2 tablespoons coconut vinegar
- 1 small clove of garlic
- 1/2 cup water
- salt & pepper to taste
Blend all ingredients together and enjoy!
